Sample Menus
All Dinners include an entrée, a starch, a vegetable, a salad and dessert.
Homemade bread and beverages are also included.
A Entrée Choice
- Prime Rib - slow roasted to a medium rare; served with fresh horseradish and au jus.
- Northwest Grilled Salmon - boneless filet of salmon lightly grilled outdoors then basted with caper and fresh herb sauce and moved to finish in the oven. Served with fresh lemon wedges and tartar sauce.
B Entrée Choice
- Roast Baron of Beef - tender cut of beef that is slow roasted to bring out the best flavors.
- Stuffed Roast Loin of Pork - boneless loin stuffed with dried fruit and served with a maple cider sauce and glazed apples.
- Pecan Crusted Chicken - 6 oz. boneless chicken breast rolled in crushed pecans. and Japanese crumbs. Sautéed to a golden brown and served with cranberry béarnaise sauce.
C Entrée Choice
- Grilled Chicken Breast served with raspberry hollandaise.
- Breaded Chicken Breast served with cranberry-orange sauce.
- Honey Glazed Ham Dinner.
- Roast Turkey Dinner with all the trimmings.

Chef Bob of Miracle Ranch is an active member of the Washington State Chef's Association, through which he's constantly sharing and gleaning new ideas. He says, "I am honored and blessed by serving guests in my home." His choice of wording is telling-just as he speaks of the ranch as 'home,' he treats visitors and staff as family members, serving them with a thoughtful and loving attitude.

Island Lake's Chef John, a graduate of the Culinary Institute of America, has worked in food service for 26 years. His extensive experience includes employment at the White House Retreat Center in Virginia. He notes that camp ministry impacted his life in high school, and he enjoys giving back some of what he received. "Our hope and prayer in food service," he says, "is to serve the kids and staff with a servant's heart and attitude."
